Tanzania Institute of Food Science and Technology (TIFST) is the professional society originating from Tanzania Food Science and Technology association. The main objective of this body is to promote and further knowledge development, and application of food science and technology through education, research, and communication, in order to improve food supply, safety, quality, and its use. The society will help food industry professionals, food regulators and educators to develop and promote technical proficiency, ethical practices and effective communication through interaction and collaboration of food science and technology professionals, domestically and internationally. The Institute could enable the country to build a strong food industry that provides a safe, nutritious and dependable food supply to its people.
In collaboration with Cluster Competitiveness Program (CCP)  TIFST Tanzania Institute of Food Science and Technology has been launched  today on the 13th April 2012.The event took place
 at Blue Pearl Hotel, Ubungo Plaza in Dar es Salaam starting.
It was a historical event i managed to take some photos for the event


Meditation is not sleep. But it is very personally subjective and doesn't conflict with any religious dogma or belief system. It requires daily practice for optimum benefits. It's considered better to meditate for short periods daily than long periods occasionally.

Meditation requires you sit comfortably in a restful space, close your eyes, and allow mind chatter to settle on its own without forceful intervention. It also includes focusing on your breathing while calmly witnessing your thoughts and mental imagery without attachment or aversion.

Recently, medical researchers have been exploring the physiological and psychological benefits of daily meditation.

Research on meditation proves health benefits
(1) Heart health: Meditation leads to calmness and better stress management. One report from England claims it cuts heart disease in half. The study was done on people with a history of heart health problems. Another study in Southern California had similar conclusions.

(2) Blood Pressure: Blood pressure is lowered naturally by practicing meditation daily. This has been measured and recorded.

(3) Stress reduction and improved energy levels: General health, immunity, and energy levels are boosted by meditation in that it reduces sympathetic nervous system activity, resulting in reduced stress hormones released. Chronic fatigue or adrenal fatigue and a compromised immune system are the direct results of too many unnecessary adrenaline and cortisol secretions.

(4) Increased intelligence: A University of California, Los Angeles study showed MRI evidence of increased gyrification (brain matter folding) in the cerebral cortex, the part of the brain associated with overall cognitive intelligence.

(5) Self awareness and reflection: Similar studies in Massachusetts and Germany showed brain matter changes corresponded with feelings of improved self esteem and peacefulness within eight weeks of daily meditation.
A meditation opinion
Now medical science assures us it's a good idea to meditate for practical health reasons. Consider how this benefits us as our food and water is being poisoned, beneficial foods and supplements are being banned, and toxic pharmaceuticals are shoved our way.

Let's add the worsening economic and financial situations inflicted upon us by elite financial manipulators. All this awareness is conducive to stress unless one is oblivious. Even those who are oblivious have other daily functions that are stressful to them.

We simply live in stressful times. But with meditation, we all have an equal opportunity of release that helps us maintain good health despite all this.

Escaping into delusional fantasy is avoided. This release doesn't require expensive vacationing, drug and alcohol use, or binge eating. Lots of TV makes you duller and more stupid. Lots of meditation makes you smarter and more able cope in this mad world through tolerance 

All these benefits haven't delved into the increased spiritual awareness that eventually leads to absorption into inner realms of existence and eventually even total spiritual salvation. Meditation masters consider this the ultimate goal of daily meditation.

Starting meditation with only your health in mind will get you going on that journey too. Guess that makes reason number six.

Helping the body's defense system
The body's defense system is only as dependable as the support it gets. Some people are just blessed with a good set of genes that ensure a strong immune system. For others who are not as lucky, they must work for immunity by observing proper nutrition, sufficient rest, a healthy active lifestyle, plenty of sun and reduced stress. Recent studies have shown that getting enough of these while cutting down on unhealthy habits and avoiding processed foods restores the immune system to peak performance.

Observing proper sanitation also plays a vital role in keeping the immune system working. It is recognized as the best preventive medicine and its actual practice can reduce outbreaks and diseases, translating to significant economic, environmental as well as social benefits.

Antibiotics and vaccination as remedies to assist the body's defenses against disease have now been debunked by recent findings. Of late, antibiotics have been shown to attack beneficial bacteria in the stomach and suppress immune functions.
Foods that naturally boost the immune system
Foods that boost the body's immune system can offer a lot of healthy options for those who wish to be more conscious in what they take in. To be sustained, the immune system heavily depends on the stomach for support. Malnourished individuals are more susceptible to disease as opposed to those who observe a healthy nutritious diet. Below are some of these examples:

1. Echinacea - Echinacea is a popular herb that has been identified to boost immunity. Combined with goldenseal, another herb, or enjoyed alone as tea, this member of the daisy family has been found to prevent and treat upper respiratory tract infections as well as the common cold.

2. Ginseng - This herb has many varieties. The most commonly studied variety is Panax ginseng, also known as Korean ginseng. Its main active component, ginsenosides, has been proven to have anti-inflammatory and anti-cancer properties. Clinical research studies have demonstrated that it may improve immune and psychological functions as well as conditions related to diabetes.

3. Garlic - This spice has had a long history of medicinal value. In a recent study conducted by Dr. Ellen Tattelman, an assistant professor at the Albert Einstein College of Medicine of Yeshiva University, New York, it was reconfirmed that garlic indeed has cardiovascular, anti-microbial and antineoplastic properties. It's also a perfect spice to use when doing sauteed dishes.

4. Bell peppers- This pepper variety does not contain capsaicin, unlike its other feisty cousins. On the contrary, it is sweet and crunchy and contains the carotenoid lycopene which lowers the risk of cancer; beta-carotene which is converted to vitamin A; and Zeaxanthin, known to prevent macular degeneration and cataracts.

5. Ginger - This herb has been shown to reduce inflammation, cardiovascular conditions, blood clots and cholesterol. In a study, researchers found that animal subjects given ginger extracts had a significant reduction in cholesterol and blood clotting qualities. Moreover, it has been observed to inhibit the behavior of genes connected with inflammation.

6. Turmeric- This spice contains curcumin, which has notable antioxidant properties. It also has antibacterial, anti-inflammatory and stomach soothing benefits. It reduces inflammation by stimulating the adrenal glands to increase the hormone that lessens inflammation. Animal studies on this herb have revealed that turmeric protects the liver from the adverse effects of alcohol and certain toxins. Turmeric also helps in digestive problems by stimulating bile flow.

7. Gingko Biloba- Gingko biloba's leaves contain antioxidant compounds called bilobalides and ginkgolides that protect the body from damage caused by free radicals. Moreover, it has also been found to protect against radiation. In a study using animal subjects, ginkgo was demonstrated to have protected the test subjects against radiation poisoning. The latest research also suggests that extracts of this herb can neutralize oxidizing agents and free radicals caused in the cells due to radiation, thus preventing cell death. In fact, NaturalNews recently reported that ginkgo extracts reduce brain damage by up to 50 percent.

8. Ganoderma- This is a bitter mushroom also known as reishi. It has long been a popular herb in Chinese medicine attributed to assisting in longevity and health. Its digestive health benefits demonstrate the lowering of stomach acidity, resulting to an increase in the body's metabolic rates and the promotion of waste elimination.

10. Cat's claw - This herb from Peru is commonly used for stomach problems. Recently, however, it is becoming known as an exceptional immune response stimulator that helps the body to fight off infections and degenerative diseases. It contains oxindole alkaloids enhancing the immune system's capacity to engulf and destroy pathogens.

                          MDALASINI NA ASALI
Asali inafahamika vema Duniani kote kama mojawapo ya silaha ya kiajabu katika kupigana na
magonjwa na matatizo yatokanayo na uzee.
Sasa hivi, utafiti mpya umeonyesha kwamba uwezo wa asali unaweza kuongezwa maradufu kama
itachanganywa na mdalasini wa kawaida.
Uchunguzi wa kina ufanywao kwa wiki na jarida la World News wa Tiba, wataalamu wa madawa
yatokanayo na mimea pamoja na kijarida cha afya na lishe, imeonekana kwamba kuna dazani nyingi za
umuhimu wa asali na mdalasini pamoja na michanganyiko {dawa} ya kusisimua iletayo afya bora.
Kama ifuatayo:

   1.Ugonjwa wa Viungo/Maumivu na Uvimbe {ARTHRITIS}.
 Wataalamu wa lishe wanapendekeza kuchukua kwa kutumia mchanganyiko wa sehemu moja ya asali
 pamoja na sehemu mbli za maji vuguvugu na kijiko kimoja {cha chai} chenye mdalasini - na kuchua

Ndugu wapendwa ni mataumaini yangu kuwa mu wazima, poleni sana na mihangaiko ya hapa na pale ya kimaisha.
Leo ningependa kuleta kijiweni  mada ihusuyo vyakula tulavyo na virutubisho tuvipatavyo:

Chakula hutupa nguvu na virutubishi ambavyo mwili huhitaji ili kudumisha afya na maisha,kukua na kustawi, kusonga, kuchapa kazi kucheza na kujifunza.
Mwili huhitaji virutubishi vya aina nyingi - protini, wanga, mafuta, na madini - na hivi hutokana na vyakula tulavyo.
  • Protini zinahitajika kujenga na kudumisha misuli, damu, ngozi na tishu na viungo mwilini.
  • Wanga na mafuta kimsingi hutupa nguvu, ingawa mafuta mengine pia huhitjika kama vifaa vya ujenzi na kuusaidia mwili kutumia baadhi ya vitamini.
  • Vitamini na madini huhitajika kwa viwango vidogo zaidi kuliko protini, mafuta na wanga, lakini navyo ni muhimu kwa lishe bora. Vinasaidia mwili kufanya kazi vizuri na kuwa wenye afya. Baadhi ya madini pia huwa sehemu ya tishu za mwili, kwa mfano, kalisiamu na floridi ilyo katika mifupa na meno na chuma hupatikana katika damu.
  • Utembo na maji safi pia huhitaji kwa maakuli mazuri.
Vyakula vyote vina virutubishi lakini vyakula mbalimbali huwa pia na tofauti vya virutubishi mbalimbali.

  • Vyakula vyenye wingi wa kabohidrati ni mchele, mahindi, ngano na nafaka, aina zote za viazi vikuu na mzizi yenye kabohidrati na sukari.
  • Vyakula vyenye wingi wa Shahamu ni mafuta, baadhi ya nyama na bidhaa za nyama, mafufa ya nguruwe, siagi, samli na baadhi ya bidhaa za maziwa, siagi kutokana na ute wa njugu, baadhi ya aina za samaki, vyakula vya jamii ya njugu nasoya.
  • Vyakula vyenye wingi wa vitamini A ni mboga zenye kijani kilichokolea, karati, viazi vitamu vyenye njano iliyokolea, boga, embe, papai, mayai na ini.
  • Vyakula venye kijani kilichokolea , jungu, maharagwe, mbaazi, nafaka, nyama, samaki na mayai.
  • Vyakula vyenye wingi wa vitamini C ni matunda na kiasi kikubwa cha mboga, pamoja na viazi.
  • Vyakula vyenye wingi wa ayani ni nyama, samaki, njugu, maharagwe, mbaazi, mboga zenye matawi ya kijani kilichokolea na matunda yaliyokaushwa.
